Tom Kha Gai - Chicken in Coconut Milk Soup
100 grams. - large chicken breasts cut into bite-size pieces.
2-3 pieces - galangal sliced
2 cups - coconut milk (1.5 cup coconut cream + 1.5 cold water)
2 leaves kaffir lime leaves crushed
1 stalk - lemongrass crushed
2 tbsp - lime juice
10 chiles - fresh chilies crushed
2 tbsp - fish sauce
1 tsp - sugar
1 onion - peel skin off, cut in hasf and cut both pieces in quarters
1 tomato - peel skin off, cut in half and cut both pieces in quarters
4 angle mushroom - shred in medium size
Coriander and spring onion chopped for garminsh
1. Bring coconut milk to a boil and add lemongrass pieces, galangal and kaffir lime leaves.
2. Add optional ingredients and boil over medium heat for a few minutes, then add chicken pieces and cook for 5 minutes, Add lime juice, sugar, fish sauce and chiles.
3. Pour soup in a bowl and garnish with coriander and spring onion according to taste.
